Kodo Millet Curry Leaf Rice
Curry leaves are rich source of iron and folic acid. They help to control the blood sugar levels and are rich in Vitamin A,B and E. This dish is made with Kodo Millet
Ingredients
Kodo Millet Rice : 1 cup
Curry Leaves : half fistful
Coriander Leaves : half fistful
Green Chillies : 6 nos.
Fresh Grated Coconut : 1 tablespoon
Salt : to taste
Groundnuts : 1 tablespoon
Lemon Juice : 1 teaspoon (adjust according to taste)
Oil : 11/2 tablespoons
Tempering Ingredients : 1 teaspoon
Instructions
- Add curry leaves, coriander leaves, green chillies, fresh coconut, salt to a mixer grinder and make a fine paste.
- Heat oil in a wide heavy bottomed steel pan and add tempering ingredients, groundnuts and sauté well.
- Later add the fine curry leaf paste and fry until the raw smell goes away.
- Now add the cooked millet rice, lemon juice and mix well. Serve it along with chutney or raita of your choice.
