
Barnyard Millet Vegetable Pulav
This recipe is a healthy, filling and delicious rice recipe made with the combination of vegetables and barnyard millet.
Ingredients
- Barnyard Millet : 1 cup
- Desi Cow Ghee : 1 tablespoon
- Oil : 4 tablespoons
- Curry leaves : 1 sprig
- Coriander Leaves : half fistful
- Ginger Garlic Paste : 1 teaspoon
- Cabbage : 3/4 cup
- Tomato : 1 medium
- Onion : 1 medium
- Carrot : 1 medium
- Green Leafy Vegetable : 1 cup Punarnava Leaves, tightly packed, finely chopped
- Beans : 1/2 cup
- Green Chillies : 8 nos.
- Dry Coconut : 1 tablespoon
- Lemon : 1 medium
- Salt : to taste make fine paste of coconut, green chilli, salt
- Water : 1 : 21/2 millet: water
- Tempering Ingredients : 1 teaspoon
Instructions
- Heat oil in a wide heavy bottomed steel pan and add tempering ingredients, curry leaves and fry well.
- Then add finely chopped onion and sauté well.
- To it add ginger garlic paste and fry until the raw smell goes away. To it add finely chopped carrot, beans, cabbage, tomato and fry them for ten minutes.
- Then add green chilii paste, finely chopped green leafy vegetable.
- After five minutes add soaked barnyard millet and fry for two minutes.
- To it add the water in which millet is soaked and cook on a low flame until done.
- Turn off the flame and add ghee, lemon juice, coriander leaves and mix well.
- We can add veggies of our choice.
